Savory Milkfish Stew

 

 This recipe is very much inspired by Filipino cuisine, where milkfish (bangus) is a staple! In the Philippines, it’s often prepared in various ways—grilled, stewed, fried, or even stuffed (rellenong bangus).

The combination of soy sauce, ginger, tomatoes, and bell peppers is reminiscent of classic Filipino dishes like paksiw na bangus (milkfish stewed in vinegar and spices) or ginataang bangus (milkfish in coconut milk).




Savory Milkfish Stew

Ingredients:

  • 3 pieces of milkfish, cleaned and cut into sections

  • 2 tomatoes, chopped

  • 1 bell pepper, sliced

  • 1 tablespoon oil

  • 2 tablespoons soy sauce

  • 1 tablespoon ginger, minced

  • Salt and pepper to taste

  • Additional spices (such as crushed red pepper flakes, dried herbs)

Instructions:

  1. Prep the ingredients:

    • Clean the milkfish thoroughly and cut into sections.

    • Chop the tomatoes and slice the bell pepper.

    • Mince the ginger.

  2. Sauté the aromatics:

    • Heat oil in a large pot over medium heat.

    • Add minced ginger and sauté until fragrant.

    • Toss in chopped tomatoes and sliced bell pepper, cooking until softened.

  3. Add the milkfish:

    • Place the fish sections on top of the cooked vegetables.

    • Season with salt, pepper, and any additional spices.

    • Pour soy sauce over the fish and veggies to enhance flavor.

  4. Simmer to perfection:

    • Cover the pot and let everything simmer for 20-25 minutes until the fish is fully cooked and infused with rich flavors.
